Chocoholics Anonymous - baking American dreams

...try to write also the experiences from the course "Chocoholics anonymous vol 7" in English. Are you ready? To see and taste the nature of American style baking? Baking mocha berry meringue parfaits. Oh, my goodness. Sounds complicated. I'm just an ordinary home baker. Can I manage this? I with my anonymous chocoholic partner?

All we knew before from this course was that we'll try something brand new recipes and make something very good. Without counting calories. And that's for sure that in this recipe there is calories and a lot. Don't think about it now but start baking. The whole recipe is at the end of the blog if also you want to try. To bake an American dream parfait without counting calories.

First. The mocha meringue. Beating up the whites and superfine sugar. - In this recipe you don't have to make meringue perfect, says the teacher Sabrina Porterfield. We are gonna break it, so it doesn't matter how does it look like. And adding cocoa and espresso powder you have to be very, very gentle, Sabrina continues. So, don't kill it! It's meant to be marbeled.





Second. The chocolate cheesecake filling.
Upps. Sorry. We almost ate it all. So can't show you many pictures from this part. This was absolutely our favorite ingredient. So smooth and  almost too good to be true. A LOT of cheese with sugar and cocoa powder. Making this we also made some cocoa art. As you can see. A powder heart. So this parfait is absolutely made with love. Or is it just so that life mostly is like you want to see it to be? Even in baking.



Third. Rasberry filling. Liked this ingredient also. The opposite to the first. Not so sweet but fresh. Boiled rasberries. Less sugar or no sugar at all. As you like it.


Fourth. Exploding volcano. Not ours but our classmates. This didn't belong to the recipe. We had brand new ovens in the class and something mysterious happened. The oven changed the temperature itself. This meringue almost burned.


Fifth. Stabilized whipped cream. We passed stabilizing because we didn't want to use gelatine powder. We just whipped the heavy cream and icing sugar.

Then it was time to check if the meringue was ready. And it was. -It's perfect. Moist like it should be, said Sabrina. Wow, we ordinary home bakers made it!


Sixth. Time to make the portions. After tasting all the sweet ingredients during the baking we both notice that we only can think to eat a very small portion now and take the rest ingredients home to eat later.


So after the course we had a sweet afterparty at home. Parfait was good but to be honest a bit too sweet for me and my partner. So at home we used the rest of the ingredients and tuned the recipe a little. We made a Finnish-American chocolate rasberry cheesecake. Without counting calories either. No meringue in it but added a little bit melted coco oil and dark chocolate to the cheesefilling. And the base we made from the crushed cookies and melted butter. Also our chickens had a sweet day and they got the meringue. One course and two recipes. One given and another inspired. Not bad at all.

This course should be only a delicious baking course. But what else we got? I got my sleeping language skills back. I also felt healed from chocoholic at least for a day. After sweet course day I could not even think about the chocolate. But you know what? Maybe that was the whole idea. If you think about the name of the course.

However, the absolutely best thank you for me from the course was when my 10 years old partner said during the the way home. -At the end of the course I felt that I began to understand what Sabrina said. Mission successful. Best practise for language skills really is doing and listening then speaking.

Aina ei tarvitse matkustaa Kallaveden kainaloa edemmäs kalaan. Tällaiset kokemukselliseen tekemiseen yhdistyvät kielitaidon kurssit ovat todella hyvä oppimisympäristö ja tapa herättää henkiin arjen kielitaito. Oikein onnistunut oli myös ajatus ottaa kymmenvuotias pikku leipuri mukaan kielikylpyyn. Siihen rohkaisen muitakin. Huhuu. Satavuotias Kuopion kansalaisopisto. Tällaisia yhdistelmäkursseja voisi olla enemmänkin tarjolla. Ja ehkä niitä voisi myös markkinoida kielikylpyinä sekä kielten että sisältöaineen opiskelun puolella. Osallistavina kielikylpyinä. Vanhempi-lapsi/nuori-kursseinakin. Kielen opiskelu voi olla osallistavaa ja samalla hauskaa. Monta uutta sanaa, ilmaisua, ääntämistä ja intonaatiota tuli opittua natiivilta opettajalta. Tarinankerrontataitoa ja hersyvää huumoria unohtamatta. Kokemusten rohkaisemana uskaltauduin vielä menemään mukavuusalueeni ulkopuolelle, kun kirjoitin kurssikokemuksistani opetuskielellä. Virheriskeistä välittämättä. Ajatuksella, että tärkeintä on tulla ymmärretyksi.

Mokka-marja-marenki -parfait (recipe by Sabrina Porterfield):

Mokkamarenki:

6 munan valkuaista
1/2 tl suolaa

400 g erikoishienoa sokeria
2 rkl kaakaojauhetta
4 tl espresso pikakahvia

Vatkaa valkuaiset ja suola. Lisää sokeri vähitellen joukkoon ja jatka vatkaamista, kunnes marenki on valmista. Lisää marenkiin lopuksi varovasti käännellen sihdattu kaakao- ja pikakahvijauhe. Nostele leivinpaperilla päällystetylle pellille ja paista 110 asteessa uunin keskiosassa noin tunti. 

Suklainen juustotäyte:

225 g mascarpone-juustoa
225 g tuorejuustoa
2 munankeltuaista
200 g sokeria
1,5 tl vaniljasokeria
30 g kaakaojauhetta, sihdattua
60 ml kuohukermaa

Vatkaa juustot pehmeäksi. Lisää sokerit ja munankeltuiaiset ja vatkaa hyvin. Lisää kerma ja vatkaa vielä, kunnes seos on tasaista ja pehmeää. Lisää lopuksi kaakaojauhe.
Peitä ja laita odottaamaan jääkaappiin.

Vadelmatäyte:

375 g vadelmia
3 rkl perunajauhoja
3 rkl sitruunamehua
(vähän tai ei lainkaan sokeria)

Laita ainekset kattilaan, sekoita ja kuumenna, kunnes vadelmat kiehahtavat.
Peitä ja jäähdytä jääkaapissa.

Stabiloitu kermavaahto:

1,5 tl liivatejauhetta
6 tl kylmä vettä
3,5 dl kuohukermaa
45 g tomusokeria, sihdattua

Yhdistä liivatejauhe ja vesi. Anna levähtää hetki, kunnes sakenee. Kuumenna seosta kattilasssa, kunnes liivate liukenee. Ota kattila pois levyltä, lisää joukkoon muutama teelusikallinen huoneenlämpöistä kermaa ja sekoita. Anna seoksen jäähtyä, mutta ei jähmettyä.
Vatkaa kerrma ja tomusokeri vaahdoksi ja yhdistä liivate kermavaahtoon.

Parfaitin kokoaminen:


Pilko marenki palasiksi ja laita kutakin ainesosaa vuorotellen kerroksittain annosmaljoihin tai isompaan tarjoilukulhoon.
